Edit ROM to change Words displayed on DMD?

Looking for someone with experience editing ROMs to change some of the displayed DMD text / words. I'm using SWRDS rom want to change few words that show on the DMD. I used a HEX editor to change the ANSI text but that doesnt seem to change what is sent to the DMD screen.

Are you making a mod of the Swords Of Fury table?
Do you want to modify the original rom or a colorized rom (I don't know if one exists)?

As said by @ebor, if you want to change a lot of text, creating a "colorization" (even if you don't colorize the frames) where only the words are changed would be "easy" (you would still have to dump the whole rom and create detection masks).

I don't know how to modify a ROM itself, but Ebor is in touch with someone who did it for Bad Cats.
