I just recently got the itch to hook up HyperPin and it is so damn awesome. Before I just been using the VP GUI File/Open option to launch tables while my display is vertical which is painful.

So I'm using Hyperpin Editor and the total amount of games compared to tables in my folder does not match. Is there an easy way to generate a list of tables I have that are not currently in my visual pinball.xml ?

Unfortunately, this editor does not automatically create the XML based on your folder. There are a couple other editors on the HyperPin forums, but I'm not sure if any of them will create the XML based on your tables folder.

It looks like Hyperpin VP Table Manager can accomplish this. Then I can get all the description information filled it by either sticking with that or using  Hyperpin Editor.
