Primary setup: 1 screen, 16" M1 MacBook Pro. 2/3 of the tables I've tried run great, and it's easy to jump over from whatever I'm doing and play a game or two.

 

Secondary setup: 2 screens, 32" 2k vertical playfield (25whatever by 1440), 27" 4k backglass, both only 60hz. The PC has a day job as my Ubuntu server, so it gets used less than the laptop.

I'm running a 2-screen Backglass + Playfield with a 3rd screen for Instruction Cards. I think less than 5% of my library has Dot Matrix displays.

 

I highly recommend a dedicated screen for Instruction Cards (or an apron display). Most people I show my cab to don't even know that pinball games have rules, "Oh, I thought I just wanted to keep the ball from draining". Adding the Instruction Card screen was a big "Aha" moment.

 

I just use an old Kindle tablet running SpaceDesk connected via USB.
