Multi use PC

Times are tough so they say.  I have 2 hobbies which involve having good quality PC's and I can no longer afford to keep 2 good quality gaming spec PC's running.

So at the moment I have a dedicated PC inside my pincab which is setup just for the pincab   

I am also a sim racer.  This setup has a 3 screen setup (32") and a bunch of USB peripherals (pedals, wheel, button boxes etc etc. I also have a PC for this.

 

I would really like to use one PC to fuel both hobbies but I am a little stuck on how to do this.

I was thinking I could dual boot the PC and have 2 different profiles for the display settings but I am still unsure how I could handle the monitor connections without having to plug/unplug the monitors and USB devices each time I swap between pinball and racing.

Someone suggested a KVM switch but as far as I know these a for mainly switching multiple PC's on one monitor.  I'm trying to do the opposite.  One PC over different displays.

Ideas?  I need to update PC's soon so this is why I am asking

Google "Reverse KVM", although from what I've seen at first glance those devices seem pretty expensive, and you could probably just buy a low-end pincab-capable PC for that money.
