How can I update the "ROM test" screen to have recent ROMs?

I'm running VPINMAME 2.8, but the ROM list is outdated. In particular, the Pirates of the Caribbean ROM is not on that list. How can I "refresh" this list to have the newest ROMs?

It sound to me that you are running the official Vpinmame. You need the newest SAM from this site. Go stable or go beta - your choice.
