21 x 9 Playfield

I read that a 21 x 9 playfield screen would not work because the tables are with a 16 x 9 format. Excuse my limited knowledge on how the tables are created, but even on a 16 x 9 playfield, the table in its original size is closer to 21 x 9. Can anyone clarify this?
